Banana and Berry Loaf
Some over-ripe bananas in the fruit bowl inspired this and it gave me an opportunity to use up a few left over frozen berries which the children use for smoothies after school! It turned out way better than I expected - so hence I am sharing the recipe 🙂
- 150 g butter softened
- 1 cup brown sugar
- 2 eggs lightly beaten
- 2 ripe bananas mashed
- 2 cups self raising flour
- 1 teaspoon cinnamon
- 1/2 cup frozen strawberries naturally you can also use fresh!
Preheat the oven to 180C.
Oil spray a loaf pan lightly.
Using a stand mixer, cream the butter and sugar for 3 minutes until creamy.
Add the eggs and beat on medium high for another 3 minutes until pale.
Add the flour and cinnamon and turn the machine on slow for around 45 seconds until the mixture just comes together.
Remove the bowl from the mixer and fold in the banana.
Toss the berries in a little flour and then add them to the mixture (the flour helps to stop them sink directly to the bottom of the pan)
Pour the mixture into the pan and smooth the surface with a spatula.
Bake for 1 hour or until the middle is cooked through and the edges come away from the sides of the pan.
Cool for 10 minutes in the pan and then remove and allow to cool out of the pan.
This loaf will have a gorgeous crusty exterior and a light and moist insides.
If your mixture seems a little dry then add 2 Tbsp milk and stir through after you have added the flour.
