New Year Fearless Cooking
We will aim to cover a heap of techniques over these two weeks. The more kids are exposed to these ideas and get a chance to practise, the more ingrained and normal they will become. In my new space and with smaller class sizes we are going to really get into the nitty gritty of the following
Knife Work: safe handling; different cutting techniques; management of the knife
Cutting Skills: slicing, dicing, mincing – juliennes, batonnets, brunoise etc
Base Skills with onions and garlic, carrots and celery – how to cut, how to use, what they do and how they add to flavour
We are going to cook a whole plate of food each day – so we will look at the timing of a meal. When do you cook the vegetables? When should the meat be seared? What if we poach something? We will be tasting and testing and tasting again. We will be keeping a little journal of what we learn along the way and what we may be able to create later with the skills we have attained.
January 9th – 12th: 9am – 12pm
This week we will cook up awesome food so the kids will not cotton on to ALL the stuff they have learned. For them the process will simply be fun filled and with a delicious outcome at the end. We will make some staples also which can be brought home for your fridge and used up in alternate dishes
Souffle technique and practical creation
Lamb and Bacon burgers with homemade sauces
Pasta – different types, how to cook al-dente + yummy sauces to accompany
Delicious treats and desserts
January 16th – 19th: 9am – 12pm
As always we will be cooking up really great family food that can translate to dishes for you and the kids to be able to re-create at home. We will be working on emphasising timing and presentation to the table of all the food so that we understand the process. Sticking to this will be paramount for serving a successful warm meal!
Baking and Roasting of different items including one dish dinners such as a beef and bean taco bake
Making a béchamel sauce and getting it fabulous and creamy and of course lump free and what we can utilise it for
Tarts – utilising different bases: pastry, bacon, potatoes
Yummy treats without too much sugar! Having fun with delicious fresh ingredients and presentation to inspire.
