Beef wrapped in betel leaves

Ingredients

Ingredients for 50 skewers

  • 1 kilo ground beef
  • 50 betel or grape leaves

Marinade

  • 4 cloves garlic
  • 2 lemongrass stalks
  • 4 shallots
  • 2 Tbs curry powder or 5 spice powder
  • 2 Tbs Oyster sauce
  • 2 tsp Fish Sauce
  • 1 Tbs Cornflour
  • sugar salt, pepper

Instructions

  1. Soak the leaves in room temperature water for 10 minutes, rinse off and drain. Set aside. Mix the beef with the marinade ingredients and allow to sit for at least 2 hours in the fridge. You can wrap them at this stage if you wish but give them a couple of hours before you cook them for the flavours to really work. Cook them on the BBQ or under a fan forced grill for 10 minutes until the beef is cooked and the leaves are lovely and smokey and have changed colour a little.
