Blueberry and Chocolate Pearl Muffins

These are so decadent.  The ingredients aren’t cheap but boy they make a delicious muffin……..

Blueberry Muffins


  • 2 cup s self-raising flour
  • ¾ teaspoon s salt
  • 1/2 cup brown sugar
  • 2 egg s
  • 60 g melted butter
  • ¾ cup  milk
  • 1 cup blueberries
  • 1/2 cup Valhrona Dark Chocolate Pearls


  1. Wash the blueberries and drain.
  2. Preheat oven to 180C
  3. Sift the flour, salt, sugar, and baking powder into a large mixing bowl.
  4. In a separate bowl, beat the eggs. Add the melted butter and then the milk.
  5. Quickly mix the wet and dry ingredients until they just come together.
  6. Add the blueberries and dark chocolate pearls. Stir through the batter
  7. Bake in the oven until risen and cooked through (around 15-20 minutes)
  8. Remove at once from their tins and cool on a wire rack.
  9. These are really really good eaten so hot they burn your fingers!!!!!!!!!
