Double Chocolate and Almond Cookies

As usual these just kind of happened due to what was in my pantry!!  So don't hesitate to mix and match as you need to once you open your pantry door!


  • 1 1/2 cups plain flour
  • 1 cup cocoa powder
  • 1 1/2 cups brown sugar
  • 170 g butter unsalted
  • 3/4 cup dark chocolate
  • 3 eggs lightly beaten
  • 1 cup white chocolate chunks or buttons, or squares - or whatever goes!
  • 1/2 cup slivered almonds or chopped or an alternate nut such as pecan or more chocolate if you like!


  1. Heat oven to 175C - on regular bake setting.
  2. Throw the flour, sugar and cocoa into a bowl and mix it all together.
  3. Heat the butter and chocolate together in a saucepan, stirring, until the butter melts and the mixture is smooth.
  4. Add into the dry mixture and mix.  Then add in the eggs and stir to combine.
  5. Finally throw in the chocolate and nuts.
  6. Drop heaped tablespoons of mixture onto a silicone baking tray (or a sprayed baking sheet)
  7. Flatten the cookies slightly with a fork.
  8. Bake for 15 minutes.  Serve warm from the oven for very very happy children!
