Family Friendly Chicken Casserole (quick and easy
A guaranteed family favourite!
- 4 tbsp vegetable oil
- 500 g skinless boneless chicken thighs , sliced
- 2 kumara chopped roughly
- 4 carrots chopped roughly
- 1 leek or a red onion, chopped
- 1 stalk celery chopped
- 2 to matoes chopped
- 10 mushrooms quartered
- 2 cloves garlic crushed
- handful of sage chopped
- 1 tbsp tomato paste
- handful of chopped parsley
- 2 cups chicken stock
- cream if you wish to add it at the end!
Preheat the oven to 180°C.
Heat oil in a large pan over medium heat. Add chicken, leek (or onion), kumara, carrot and celery and saute till golden brown.
Add the tomato,mushrooms, garlic, sage, tomato paste, parsley and stock. Stir well.
Transfer the mixture into a casserole dish.
Cover and bake for 1 hour. At this stage you can then return to room temperature and then store in the fridge until you want to serve it.
Reheat by placing on the stove top and add cream at the last minute if you wish. Top with fresh herbs.
