Fragrant Chicken Balls on a bed of fresh Yang Chun Noodles and Asian Greens

This is such a simple dish but abundant with flavour - a true fresh Asian taste for the whole family to enjoy!

Ingredients

  • 2 lean chicken breasts
  • 3 spring onions
  • 1 lemon grass stalk
  • handful of coriander
  • handful of basil
  • 1 day old soft white bread roll
  • fresh chilli or chilli flakes
  • 1 knob ginger
  • 2 garlic cloves
  • 2 bok choy
  • 2 Ta Choy
  • 3 tbs soy sauce
  • 1 tbs cooking sake
  • 1 tbs sesame oil
  • salt and pepper
  • Grape Seed Oil

Instructions

  1. Wash the chicken breasts under cold running water and pat dry with paper towel. Cut into chucks and pass through a food mincer on a course setting. This gives a lovely fresh mince.
  2. - Chop the white ends of the spring onions and the basil and coriander. Using a microplane, grate the lemon grass and finely chop some chilli to taste. Add all of these ingredients with a little grape seed oil into a mortar and pestle and pound to combine.

Tip:Use a stick blender to grind the bread roll into crumbs.

  1. - Add the herbs and mince to a bowl and add in the crumbs until you can handle the mixture and are able to roll it into soft balls.
  2. - Set aside in the fridge while you prepare the noodles and vegetables.
  3. - When everything is prepared, heat some grape seed oil in a frypan and gently fry the chicken balls until they turn golden and are cooked through. Remove to a plate.

Noodles and Greens

  1. - Bring a large pot of water to the boil. Add a generous pinch of salt and a good handful of fresh Yang Chun noodles. Bring back to the boil and cook for four minutes. Immediately remove and rinse the noodles under cold water in a sieve. Set aside.
  2. - Mince garlic and ginger. Wash the bok choy and ta choy , then trim the stems at the root so that the leaves will cook evenly.
  3. - Combine the soy sauce, sesame oil and sake in a small bowl.

Tip: To take the skin off the garlic you can smash the cloves with the flat side of a knife. To mince the garlic cloves quickly simply press the tines of a fork through the clove several times to fully mince.

  1. - Heat some oil in a wok and add the garlic and ginger to briefly cook until fragrant.

Tip:Don’t let the oil get too hot or you will burn your garlic and ginger and it will become bitter

  1. - Add the greens and cook for 1-2 minutes to warm through. Add in the noodles and the soya mixture. Toss with tongs to combine. This should all be done in around 1-2 minutes.
  2. - Add the chicken balls to the top to serve.
