Love love love this salad from my 6 years living in Indonesia. Use whatever vegetables take your fancy, add tofu and Chinese cabbage for authenticity, or change it up to use fresh seasonal ingredients from where you live. Create a platter so that people can take and create their favourite plate of salad. Naturally the best bit is the sour, sweet peanut sauce - this is the bit I get cravings for!


  • Vegetables
  • Potatoes boiled and thickly sliced
  • Green beans steamed
  • Spinach or cabbage
  • Softly boiled eggs
  • Cucumber thickly sliced
  • Tomatoes chopped
  • Chilli
  • Coriander
  • Mint


  • 2 cloves garlic
  • 40 g palm sugar grated
  • 2 Tbs peanut butter
  • 1 long red chilli chopped
  • 2 limes juiced
  • 2 tsp fish sauce
  • 2 Tbs soy sauce
  • 1 Tbs tamarind paste


  1. Prepare your vegetables and place them onto a board or platter. Combine all the dressing ingredients in a pestle and mortar and pound to a paste and to combine all the flavours. Serve the dressing alongside the salad to create a sharing plate
