This Homemade Roasted Garlic Mayonnaise is delicious. If you are in a hurry just jump immediately to stage 5 and make a regular home style mayonnaise instead.
If you have a blender or thermomix this is even easier to make. Mix all ingredients together except the oil. Drizzle oil in as the machine does the rest of the mixing for you.
Roasted Garlic Mayonnaise
- 5 cloves garlic
- 3 large egg yolks
- 1 tsp mustard
- 2 cups light olive oil
- 1 –2 tsp fresh lemon juice
- sea salt and cracked pepper to taste
To roast the garlic, heat the oven to 200oC.
Place the cloves in a little tinfoil parcel.
Roast the garlic for about 20 minutes, until the cloves are tender.
Remove the papery skin and mash the cloves, and set aside.
To make the mayonnaise, whisk the egg yolks well in a mixing bowl. Add in the mustard and mix together (this helps the emulsification)
Add half of the olive oil, drop by drop, whisking constantly.
Add the remaining olive oil in a slow, steady stream, whisking constantly. Add 1 tsp of the lemon juice and the mashed garlic cloves to the mayonnaise, and whisk to combine.
Add sea salt and pepper to taste.
Add more lemon juice as desired.
