Pork Ribs with Apple and Ginger
This was tonight's dinner - cooked in the pressure cooker after soccer practice and in the midst of homework being completed. When it appeared on the table, the boys were in shock that I had produced this midweek, without a fuss and on a busy night! Amazing what a drop in temperature can entice you to cook up! It is so easy and so delicious that it will happen in our house more than once!!!!! ENJOY!
Ingredients
- 5 garlic cloves grated
- knob ginger grated
- 3 sticks lemon grass grated
- 5 spring onions chopped
- huge lug of soya sauce
- huge lug oyster sauce
- lug of sesame oil
- 100 ml ginger syrup I used Hakanoa - handmade in NZ
- splash of cooking sake
- bunch Thai basil finely chopped
- 1 chilli chopped
- 2 large full racks of pork spare ribs
- 3 apples peeled and cored and sliced into wedges
Instructions

Combine all of the above ingredients and allow to marinate at room temperature for around 2 hours if you can.

Place the pork ribs into a pressure cooker.

Pour in all the marinade ingredients

Follow your pressure cooker instructions to bring to pressure and allow to cook at pressure for 1 hour.

Carefully allow the steam to escape and open the lid - the aroma will be powerfully seductive!

Take the ribs out and arrange on a large serving platter (I love to serve over roasted kumara) and spoon over the thickened apple ginger sauce.
