Sour Cream Apricot Muffins

I found a bucket of ripe apricots in a sale bin at the local supermarket - half of them were delicious with a scoop of Greek yoghurt for lunch.  Several of them were added to my favourite sour cream muffin recipe!


  • 2 cups plain flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1 egg
  • 200 g sour cream
  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 6 apricots chopped into 1/4s


  • 70 g butter - melted
  • 3 Tbs brown sugar
  • 3 Tbs milk powder
  • 2 Tbs plain flour


  1. Heat the oven to 180C
  2. Combine the flour, baking powder, soda, salt and sugar in a bowl.  Mix and make a well in the centre
  3. Combine egg, sour cream, milk and oil in a separate bowl. Whisk to mix
  4. Add the egg mixture into the dry ingredients and mix to just pull the ingredients together.
  5. Line the muffin tin with paper cases.
  6. Spoon the batter into the muffin cases - there should be enough to half fill each case
  7. Top each muffin with 2 of the apricot quarters
  8. Combine the topping ingredients and pop on the tops of the muffins and fruit
  9. Bake in the oven for 18-20 minutes

  1. Made these today – they were so yummy thank you. Even cheated and used my blender as couldn’t be bothered doing all the steps and they still came out great!
