Prepare these super salad dressings in advance and keep in glass jars in the fridge. When you need to create a quick salad, the dressing is done and ready to enhance all the delicious seasonal flavours you have thrown together in the bowl. It’s a game changer.
Lemon Dressing
A simple lemon vinaigrette which can dress a vegetable based, chicken or fish salad.
Ingredients
- 1 cup olive oil
- 1/4 cup lemon juice
- 1 zested lemon
- 1 teaspoon dijon mustard
- 1 drop garlic oil or you can smash a clove of garlic and add
- 1 pinch salt and pepper
Instructions

Measure all the ingredients into your jar and shake to combine. The more you shake, the more the mixture will come together.

When re-using the dressing from the fridge, remember to really shake it as the ingredients will have separated into layers. Whilst this looks pretty, you will need it to emulsify again for dressing your salad.

Mustard Balsamic Vinaigrette
This is a wonderful everyday salad dressing. I love it with tomatoes as it is full of flavour and complements the ripe full sweetly acidic flavour of the tomatoes.
Ingredients
- 2 tbsp wholegrain mustard
- 2 tbsp balsamic vinegar or a red wine vinegar or choose any flavour you like
- 1 tsp sugar or add a little honey
- 2 tbsp thyme fresh or dried
- 1 pinch salt and pepper
- 1 cup oil grapeseed, sunflower or other light salad oil OR olive oil if you prefer2 Tbs

Mix together the first five ingredients. Slowly whisk in the oil, whisking rapidly to blend together and thicken (emulsify)

This dressing can be made in the blender – drizzling in the oil from the top in a slow steady stream.
