Love love love this salad from my 6 years living in Indonesia. Use whatever vegetables take your fancy, add tofu and Chinese cabbage for authenticity, or change it up to use fresh seasonal ingredients from where you live. Create a platter so that people can take and create their favourite plate of salad. Naturally the best bit is the sour, sweet peanut sauce - this is the bit I get cravings for!

Potatoesboiled and thickly sliced
Green beanssteamed
Spinach or cabbage
Softly boiled eggs
Cucumberthickly sliced

Chilli
Coriander
Mint
Dressing
2clovesgarlic
40gpalm sugargrated
2Tbspeanut butter
1long red chillichopped
2limesjuiced
2tspfish sauce
2Tbssoy sauce
1Tbstamarind paste
Instructions
Prepare your vegetables and place them onto a board or platter. Combine all the dressing ingredients in a pestle and mortar and pound to a paste and to combine all the flavours. Serve the dressing alongside the salad to create a sharing plate
