How to turn courgette into zucchini fritters | in under 10 minutes

This is not just another fritter – these are a zucchini fritters! And it is so easy it will take you 10 minutes until you are munching into the most delicious take on a zucchini you can have.

This vegetarian zucchini fritter recipe can be made as is or you could add a smattering of sharp parmesan cheese to add to the flavour. Fritters are perfect for an addition to a meal, to take on a road trip, or to have stacked for breakfast.

You are only limited by the ingredients in your fridge!

Zucchini Fritters

Simplicity in a fritter - for breakfast, lunch, after-school or even into the lunchbox!


  • 1 Tb olive oil
  • 1 shallot finely diced
  • 1 courgette coarsely grated
  • 1 egg
  • 2 Tb flour
  • sea salt
  • fresh herbs


  1. Heat the oil in a non stick pan.
  2. Add the shallot and cook to soften for a couple of minutes.
  3. Remove from the heat.
  4. Meantime put the courgette and egg into a bowl.
  5. Tip in the softened shallot.
  6. Mix with a whisk, fork or spoon to combine.
  7. Add in the flour and mix again.
  8. Season with salt and fresh herbs.
  9. Heat the pan to a low/medium heat.
  10. Add 3-4 dollops of mixture and pat down so that they are like small flat pancakes.
  11. Cook until golden on the base - around 3 minutes.
  12. Flip and cook to colour the other side and cook through.
  13. Remove and serve with butter or sour cream.
